Healthy Egg Bake

Ingredients

dozen eggs or (preferred) one large container of egg whites. (pre-separated)

Diced veggies of your choice ( mushrooms, broccoli, spinach, carrots, onions, green or white, peppers any color)

Spices that you like - oregano, dill, I prefer cilantro salt pepper and a little garlic

1/2 cup flour

1 cup milk bag cheddar or mozzarella fat free cheese

Spray a cake pan with non-stick coating

heat oven to 350. Pour your egg whites into a bowl. Add your spices to taste. Add the milk and flour, fluff the mixture with a whisk. Add the veggies and pour mixture into nonstick coated pan (if you like crust you can make a large pie crust to cover your cake pan bottom then pour - it is healthier without the crust). Sprinkle fat free cheese on top. Bake on 350 until you can insert a knife in the middle and have it come out clean. - probably about 30 - 40 min. Depending on your oven and depth of the egg bake

Poppy Seed Chicken

3-5 good sized boneless chicken breasts

2 cans cream of chicken soup

1 cup butter (2 cubes) melted

1 12 oz sour cream

Topping:

2 sleeves Ritz crackers (crushed)

1 cube melted butter

1 TBS Poppy Seeds

Cooked white rice

Boil the chicken breasts until cooked through, drain,

and cool. Break up into bite sized pieces and put into

a 13 x 9 pan.

Mix the melted butter, cream of chicken soup, and sour

cream in a bowl. Pour over the top of the chicken, mix

slightly together.

Combine the crushed crackers, melted butter and poppy

seeds in a smaller bowl. Put this topping over the chicken

mixture.

Bake at 350* for 30 minutes or until lightly brown on top.

Serve over hot cooked rice.

Chili Cheese Dip

2 cans beanless chili

1/2 cup chopped onions

1 - 8 oz cream cheese

1 can diced green chilies

2 Tbs. salsa

1 package Velveeta Mild Mexican Cheese (cubed)

In a saucepan, cook the chili, cream cheese, onions, and

chilies over low heat. Add salsa when smooth and then

add cubes of the Velveeta cheese & continue stirring until cheese is completely melted.

Serve hot with Tortilla Chips

(May be kept warm in a crock pot on low heat-stir often)
