CREPES

1 cup of all-purpose flour

4 eges

Dash of salt

3/4 to 1 cup of milk

3/4 cup of water

2 Tbsp. of butter

> Sift the flour and salt into bowl.

> Add the water a little at a time, whisking constantly.

> Add the eggs one at a time. Finally, add the milk and stir vigorously until the batter is smooth.

> Melt the butter and add it to the batter.

> Let the batter sit for about one hour.

> Heat a crepe iron or small frying pan. Lightly grease the pan.

> Ladle about 3 tablespoons of batter into the pan and immediately tilt the pan in all directions so the batter covers the bottom of the pan.

> Cook for about 1 minute or until lightly brown on the bottom. Check by lifting the crepe with a spatula. Quickly turn the crepe over and cook the other side for about 15 seconds.

> Serve hot with honey or fill with a hot or cold fruit sauce with whipped topping, ice cream, and fresh coconut sprinkles.

> Serves 4

Tips and Variations: Play with this one.

Serve frozen as treats: Ice cream and small brownie bits folded together, whipped topping, and shredded chocolate sprinkles all rolled up in a crepe and refrozen.



Egg Custard

8 eggyolks(can substitute 4 whole eggs)

1 can evaporated milk

1 cup sugar (can lessen sugar to 2/3 cup)

add vanilla to taste

Mix ingredients together.

Make syrup by cooking 2/3 cup sugar and 1 tbsp of water.

When sugar is caramelized,pour syrup to custard cups

before syrup cools off. Pour the egg mixture.

Bake in 350F for 45 min to 1 hr in baine marie.

What to do w/eggwhites in case you follow above recipe.

Make a Chocolate Custard

8 eggwhites

1 can condensed milk

1 1/4 cup warm water mixed w/4 TBSPS OF HOT COCOA OR COCOA

SUBSTITUE OR COFFEE SUBSTITUTE

Mix above ingredients.

Make syrup from Egg custard recipe. Pour syrup into

custard cups,when cool,then pour above mixture.

Bake 350F for 45min to 1 hr in baine marie.

Old Fashioned Fruit Cake

1 cup butter

1/4 cup molasses

1 cup brown sugar

6 eggs

3 cups flour w/3 tbsps baking powder mixed

2 cups fruit glaze

1/4 cup each of raisins,prunes,dates

1/2 to 1 cup of chopped mixed nuts

(soak fruits and nuts in 2/3 cup rum)

Cream butter and sugar,add molasses,beat in eggs,add flour

mixture then fruit mixture.

Bake in floured/greased pan at 350F about an hour or until

done. For moist cake, bake in baine marie which may

require more time.

BREAKFAST SOFT TACOS

1 or 2 Eggs

Small amount (1 or 2 Tb each) of onions, pepers, mushrooms, tomatoes, or

other vegitables of your choice finely chopped.

1/4 cup Hashbrown potatoes (pre-cooked)

1 small flour tortilla

1 or 2 (Heaping) Tb Shreaded cheese

1 or 2 (Heaping) Tb chopped bacon, sauage, and/or ham

Scramble egg and finely copped vegitables together. Add meat and potatoes. Cook together for a minute or two. Place in center of a folded flour tortilla and top with cheese.

Tips and Variations : Add sour cream, shreaded lettuce, and/or top with salsa. For those on a meat free diet leave out the meat.

Sponge Cake (no baking soda and no baking powder added)

In bowl, beat 8-10 eggyolks. Add 1/2 cup sugar gradually.

Fold in 1 cup sifted cake flour alternately with 1/4 cup

evaporated milk.

Now preheat oven to 350 F.

In separate bowl beat 8-10 eggwhites (mixed with 1/8 tsp

cream of tartar). When soft peaks form, gradually add 3/4 cup sugar until stiff peaks form.

Fold yolk mixture into white or vice-versa. Fold 1/3 cup melted butter.

Pour in tube pan.

Bake in preheated oven for 45 minutes or until done.

Cool upside down. Even better the next day.

Variation:

Pour strawberries (or your favorite fruit topping) over slices of cake. Add whip cream.

Easy to make Beef Taco Casserole.

Ingredients:

12 thinly sliced sandwich steaks

1/4 tsp salt

1/4 tsp pepper

1/2 tsp chili powder

11 oz can tomato soup

14 oz can chili beans

1/3 cup sliced olives

1/2 cup chopped onions

1 cup grated cheddar

bag of corn chips

Directions:

Preheat the oven to 375 F. Break 12 thinly sliced sandwich steaks into a skillet, cook and toss until browned without overcooking. Season with 1/4 tsp. of salt, pepper and 1/2 tsp. of chili powder. Add one (11 oz.) can of tomato soup and one (14 oz.) can of chili beans. Cook slowly for a few minutes to heat and blend the flavors. Spread a (10-1/2 oz.) package of corn chips in a baking dish, pour the steak mixture over the chips, top with 1/3 cup of sliced ripe olives, 1/2 cup of chopped onions and one cup of grated cheddar cheese. Bake in the oven until the cheese melts, and serve piping hot.

I usually use Philly-Gourmet Sandwich Steaks (can be found at your local Safeway store) for this because they are convienantly sliced and 100% pure beef.

Potato Surprise

This recipe has a wide variation in how it can be prepared. Preheat the oven to 350 degrees. Slice (1/2 inch slices) enough potatoes to fill a cookie sheet with the potatoes stacked in neat rows. The potatoes should overlap each other slightly. Melt a stick of butter and pour evenly over the potatoes. Add salt, pepper, and garlic powder to taste adding a sprinkling of crushed sage leaves for looks. Bake until done (45 min. to 60 min.). Top with cheese and continue to bake until the cheese melts.


It is possible to cut the baking time by first boiling the sliced potatoes until they start to get soft. However, if you forget to take them off in time and the potatoes slices get too soft to handle, don't panic. Spread the potatoes on the cookie sheet anyway mashing them very lightly as you go so that they are still very lumpy and cover the cookie sheet. Finely chop some onions and bell peppers into thin strips and sauté them in butter along with some mushrooms. Spread the sautéed vegetables over the top of the potatoes. Add sliced ham, bacon, or pepperoni if you like. Melt a stick of butter and pour evenly over the potatoes and vegetables. Bake for 10 to 15 minutes. Top with lots of cheese and continue to bake until cheese melts. If anyone asks what it is, you can tell them that it is a potato pizza.

Play with this recipe. You'll be surprised with what you can come up with. You can also grill the sliced potatoes, basting them with melted butter as they are cooking. Season to taste.
